Historical origins:Brisighella is the land of good agricultural products and gastronomic heritage, result of a history and a knowledge based on a right balance between taste and health, thanks also to the research and the preservation of products and flavours, based on tradition and authenticity. Following this line, from a Slow Food project proposed by Arca dei Sapori, the event “Arca dei Savori” was first held in 2002. The term Arca dei Savori refers both to ancient tastes as well as to traditional local cuisine. The term savori can be found in the texts of medeval cuisine, a cuisine that is offered during the medevial festival in Brisighella. Savori is also an interpretation of the dialect savur which recalls the simple flavors of the kitchen and household products prepared and stored according to popular wisdom as well as the products that are proposed during the Arca dei Savori in the Venetian Fortress and Piazza Marconi.
